The ocean is one big (and sometimes scary) place. I mean think about it, there are so many living creatures we know nothing about…many of which we don’t even know exist!
Jeff & I are currently in Madeira Beach, Florida and our view is unbelievable (photo below). Fish is readily available here, as opposed to having it shipped in, when we’re home in Chicago.
I made this Alaskan Pacific Cod with Orange Mint Sauce for dinner a while back and decided now would be a good time to share.
With all the holiday chaos going on, having an easy dish available to make for dinner is super convenient.
Seafood never takes as long to make as beef or pork…well, at least the way I cook um. :P

Jeff & I have been hiding from the Chicago snow over the last two weeks and spending most of our time in Miami Beach although we’re currently residing in Madeira Beach and checking out the west coast of Florida for the first time. Believe it or not all beaches are not alike. The sand here is soooooo soft, it’s like walking on powdered sugar, SERIOUSLY! Here’s a quick pic to give you an idea of where we’re at. And a HUGE thanks to our friend Carol, for allowing us to stay!
Not only has our migration south helped to provide a healthy dose of vitamin D but I haven’t felt the mad rush to go-go-go that I typically feel between Thanksgiving and Christmas (who’m I kidding…I actually feel it all the time, but it gets exponentially worse around this time of year).
Being on the beach has provided a sense of calm that I am so appreciative for.
We are slowly making our way back home to be with our family for Christmas. I’m definitely not looking forward to the drive back…maybe ice skating once we’re home but definitely not the grey skies and snow on the ground.
This is so quick, maybe I’ll cook up some Alaskan Pacific Cod when we get home. Because you know after a 10+ hour drive I’m NOT gonna want to make dinner. ;)
Alaskan Pacific Cod with Orange Mint Sauce
Ingredients
- 12oz alaskan pacific cod
- sea salt and coarse ground black pepper, to taste
- 1/2 cup fresh mint
- 1 orange
- 1/2 teaspoon sea salt
- 1/2 lime, juiced
- 2 shallots
Directions
- Preheat the oven to 350°F.
- Season cod with sea salt and black pepper. Add to a rimmed baking sheet and bake for 15-20 minutes, or until internal temperature reaches 145°F.
- Add mint, orange, sea salt, lime juice and shallots to a food processor and process until shallots are minced and everything is combined.
- Plate cod and serve with orange-mint sauce on top.
