Paleo Asparagus ScramblePaleo Asparagus Scramble

Most of us should probably be eating more vegetables and we know it. The one place a lot of people struggle with adding veggies to their diet is breakfast. The good news is that’s easy to fix, especially when you add them to your eggs.

You’ll be loading up on your greens without even thinking about it, and getting the benefits of all the nutrients and antioxidants they have to offer.

Another great way to get your greens in is by including herbs in your diet.

Herbs are just extra-flavorful plants that are used as seasonings, but they offer many of the same health benefits as eating salad. For example, including herbs and spices in your diet has proven effective in lowering blood pressure and improving glucose tolerance.

The best part about scrambles is how easy they are to make. Even if you’re short on time in the mornings, all you have to do is throw the ingredients in a skillet, stir them occasionally while they cook, and voila! You have a healthy breakfast ready in minutes!

Paleo Asparagus Scramble

Asparagus Scramble

Yield: 2-3 servings

Ingredients

  • 1 tablespoon grass-fed butter or your choice of fat (optional)
  • 1 bunch asparagus, trimmed
  • coarse ground sea salt, to taste
  • dried basil, to taste
  • dried chives, to taste
  • dried savory leaves, to taste
  • dried oregano, to taste
  • dried tarragon, to taste
  • dill weed, to taste
  • dried marjoram, to taste
  • dried rosemary, to taste
  • 5 jumbo organic eggs, beaten

Directions

  1. In a 10.25 inch cast iron skillet over medium heat, melt the butter or your choice of fat (if using).
  2. Cut the trimmed asparagus bunch into 2-inch pieces and add to the skillet.
  3. Add all seasonings and stir until well combined. Cook until asparagus turns a brighter shade of green.
  4. Crack the eggs into a small bowl and whisk.
  5. Gently pour the eggs into the seasoned asparagus and stir to combine with a wooden spoon. Once eggs are set and no longer runny split between two plates and serve.
  6. Enjoy! :)
