Don’t let this Paleo recipe fool you. Contrary to popular belief, the Paleo diet consists of a lot more than just big hunks of meat wrapped in bacon, but that doesn’t mean we can’t occasionally enjoy big hunks of meat wrapped in bacon!


Paleo is not a Meat Based Diet
The Paleo diet tends to get a bad rap because it’s not afraid to include meat with every meal, not even the fatty meats like bacon.
Despite the fact that most of us have been told all our lives that saturated fat will kill you, it turns out there’s no scientific evidence to back it up (Source).
So go ahead and cook up this delicious pig on pig and enjoy every bite! It won’t take you long and the oven will do all the heavy lifting.
Pork: The Meat That Keeps On Giving
AND this bacon wrapped pork tenderloin just keeps on giving! The extra love comes in the form of bacon fat, for you to use later. Don’t let those drippings get away. Pour them into a glass container, cover and transfer to the fridge to bake your veggies in.
Don’t Forget The Veggies
Just be sure to eat this dish with a salad or side of vegetables, because conventional wisdom did get at least one thing right: vegetables are very good for you.
Choose Pasture-Raised Pork
And when you choose your piggy from the store, go for the good stuff! To be more specific, go for pasture-raised pork straight from a farmer, if you can.
We stock our bacon in batches, and by batches I mean as soon as I get the email from U.S. Wellness Meats that their bacon is restocked we load up with 6-8 packs of the good stuff. I store it in our freezer…so we’re prepared just in case there’s a bacon shortage. ;)
And when my supply is running low and we need some porky pork pork, I’ll make a run to Standard Market because I know they’ve got my back with local pasture-raised Berkshire. :)
