These beets may not be raw, but you can impress all your guests by molding your veggies into a cylinder before serving.

What is Tartare?
Tartare is a dish made from finely chopped or minced raw protein, typically beef or fish. Tartare is much less likely to be served at home unless you have quality, fresh ingredients to work with.
You may have seen tartare listed on a restaurant menu. Jeff & I enjoyed steak tartare when we went to Gather in Chicago.
I decided to call this dish Beet Tartare because I was playing around with my biscuit cutters and shaping the beet salad when I thought it looked like beef tartare.
Despite the fancy appearance, this recipe is actually super easy to make. The oven does all the work when it comes to roasting the beets, so all you have to do is cube them, season them, and shape them. The butter will help hold them together, in addition to making them delicious.

I found that using two varieties of beets really made this dish pretty.
You can always stick to one kind of beet if that’s all you can find.
Try using different spices to create color contrast (and improve the taste).
Benefits of Beets
Beets aren’t just delicious. They’re also really good for you. They’re an excellent source of B vitamins and manganese and they come loaded with antioxidants. Beets in particular have been shown to reduce the oxidation of cholesterol (which is great, because it’s the oxidized cholesterol that is more likely to latch onto the insides of our arteries and cause all sorts of problems). They have also been shown to reduce blood pressure and may be able to help fight cancer.
