Liver is a bit of an acquired taste, but with enough butter and garlic, you can make anything delicious!

This recipe was inspired by a pâté that someone brought to the latest Paleo Porn Movie Night. He served it stuffed in mushrooms, celery and tomato and it was a pretty big hit.

What is Pâté?

Pâté is a mixture of cooked ground meat and fat minced into a spreadable paste. Common additions include vegetables, herbs, spices, and either wine or brandy (often cognac or armagnac). Pâté can be served either hot or cold, but it is considered to develop its fullest flavor after a few days of chilling. (source)

If you have friends and family that are squeamish about eating organs, blending it into a paste is always a great way to disguise it. Throw in enough butter to give it that creamy texture and it will be the life of the party!

Buffalo Liver Pate

Liver is just about the most nutritious food out there. It is packed with vitamins and minerals that we need to stay healthy. If you have yet to introduce organs into your diet, a nice, buttery pâté can be a great way to start!

The Most Nutrient Dense Food Available

Liver already provides a healthy dose of fat, as well as plenty of micronutrients.

By adding a little butter, we not only make the liver more palatable, we provide a vehicle for all those fat-soluble vitamins contained in the liver.

Eating plenty of fat also helps keep us burn more fat and keep us lean. It’s a win-win!

Where to Buy Grass-fed Buffalo Liver?

I ordered this grass-fed buffalo liver from North Star Bison and the package that arrived came from Wild Idea Buffalo so there’s two online resources right there.

Plus U.S. Wellness Meats also has grass-fed bison liver. The two animals (bison & buffalo) are two different animals, but their flavor profile are very similar.

Buffalo Liver Pate

Buffalo Liver Pâté

Yield: 8-10 Humans

Ingredients

  • 3 tablespoons grass-fed butter
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • coarse ground sea salt, to taste
  • 8oz grass-fed buffalo liver
  • paprika, to taste
  • 5-6 celery stalks, sliced into thirds

Directions

  1. Melt a tablespoon of butter in a large skillet over medium heat. Add onions and garlic. Season with sea salt and stir periodically for 10-15 minutes.
  2. With a wooden spoon, spread onion mixture to the outer edges of the pan and add buffalo liver pieces to the center. Season with sea salt and paprika, add 2 tablespoons of butter and cook for 2-3 minutes. Flip the liver, season with an additional pinch of sea salt and cook for 5-7 minutes.
  3. Transfer the onion and liver mixture to a food processor and blitz until smooth.
  4. Spread the liver pate onto celery stalks (or stuff into tomatoes, mushrooms or spread on Paleo crackers) and serve.
  5. Enjoy! :)
