Even in Chicago we’re daring to hope summer may be around the corner. When it finally gets here, we’ll be prepared with this Cantaloupe Paleo Smoothie.

Fruit makes an excellent snack, especially on a warm summer day.

Cantaloupe Paleo Smoothie

But sometimes you need something a little more filling.

That’s where the full-fat coconut milk comes in.

Just blend all the ingredients together and you’ll have a tasty, healthy snack that goes down smooth!

Sweetened With Fruit

This is the perfect snack to grab when you’re craving something a little sweet.

Both the coconut and cantaloupe add some sweetness to this Paleo smoothie, but the fat helps prevent a spike in blood sugar.

A Quick & Healthy Smoothie

Cantaloupe and coconut are both loaded with nutrients, making this a nutrient-rich option for a midday snack. 

You don’t even need to plan ahead! As long as you have half a cantaloupe and a can of coconut milk handy, all you have to do is throw the ingredients in a blender and you’re good to go. It’s incredibly quick and easy!

Cut up the remaining cantaloupe and store it in the fridge for later or whip up enough to share with friends.

Cantaloupe Paleo Smoothie

Yield: 2-3 Servings

Ingredients

  • 1/2 cantaloupe
  • 1 can full-fat coconut milk
  • 1 1/2 cups ice

Directions

  1. Remove the seeds from the cantaloupe and add to a blender along with entire can of coconut milk and ice.
  2. Blend until smooth.
  3. Pour in glass and serve.
  4. Enjoy! :)
