Sometimes you may get a craving for junk food. Whether it’s cookies, crackers or ice cream…for me, when the weather gets warm, it’s ice cream for days that comes to my mind. ;)

The Paleo diet has gone so widespread now a days that with a simple Google search you’ll find recipes for Paleo substitutes for pretty much anything, although that’s not our approach to what we consume and the reason you’ll be hard pressed to find many substitutes in the collection of recipes we share.

That said, sometimes I give new projects a go and these Paleo crackers satisfy both that cheese and cracker solution, if you can do well with dairy.

We don’t normally recommend eating crackers (aside from these or Jilz) but these aren’t your typical store-bought crackers.

Cheese is the main ingredient alongside some coconut flour, eggs and butter to hold it all together. The added seasonings make it even more delicious from the packaged variety you’d find in the store.

Of course, these Paleo Crackers are much healthier than anything you’ll find in a box.

By using real cheese (no chemicals!) and quality ingredients, like coconut flour and eggs, these babies are loaded with enough fat and protein to prevent a spike in blood sugar.

That means, if you’re like Jeff, you could eat all these Paleo crackers in one sitting without guilt, but we don’t recommend that. Even Paleo crackers are best used as a side dish or snack and kept to an occasional treat.

Homemade Baked Cheezy Paleo Crackers

Ingredients

  • 1 cup coconut flour
  • 3 cups (~0.5lb) cheddar cheese, shredded
  • 1 cup Parmigiano-Reggiano cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon paprika
  • 1/2 teaspoon coarse ground sea salt
  • 2 large organic eggs, beaten
  • 4 tablespoons unsalted grass-fed butter, room temperature

Directions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl combine coconut flour, shredded cheeses, garlic powder, turmeric, paprika and sea salt until well combined.
  3. Add beaten eggs and butter cut into managable chunks. Combine with a hand mixer until all the butter chunks disappear and the mixture is combined well.
  4. Line a rimmed baking sheet with parchment paper.
  5. Press cheese mixture into the baking sheet and press down with your hands until well pressed and as flat and even as possible without spilling over the edges.
  6. Bake for 10 minutes.
  7. Remove tray from the oven and slice into 1-inch squares then return tray to the oven and bake for another 10 minutes.
  8. Remove tray and poke hole in the center of each square with a toothpick. Separate the squares from each other and turn off the oven. Return tray to the oven to dry out. Once they are to your preferred consistency, serve.
  9. Store leftovers in a closed storage container.
  10. Enjoy! :)
