Who says you can’t have cookies at Christmas, just because you’re following a Paleo diet?

Many of us dread the holiday season. Even those of us who don’t necessarily restrict what or how we eat tend to anticipate a season of either weight gain, or testing the limits of our willpower as break rooms fill up with cakes, cookies and candy.

Well I have good news for you: you don’t have to feel deprived any more. Just hold on until you can make it home to make this Paleo treat for yourself.

Once you’ve accomplished that, the only willpower you’ll need will be to stop yourself from eating them all at once. Keep in mind these cookies are sweetened with maple syrup and be sure to check labels of the nut butter you’re using to know how much additional hidden sugar you are consuming.

Memories of Cookies

For many of us, fond memories of mom pulling a tray of cookies out of the oven is a cherished part of our childhood.

Or maybe your mom made those chocolate oatmeal no-bake cookies that sat on the counter to mold into chocolatey goodness, staring you down to steal one, two or three poop cookies, as we so tenderly called them. :)

No one wants to take away those memories, even if those cookies were filled with gluten and sugar.

Instead, start a new tradition this year with cookies that are made from wholesome ingredients, but taste so good, your kids never have to know they’re healthy.

A Bite of Chocolate Air

These cookies have the perfect combination of soft and chewy on the inside, and just a little crispy on the outside.

That wonderful texture, combined with the creamy nut butter and slightly sweet chocolate, help to create a cookie that is irresistible.

Chocolate No-Peanut-Butter Paleo Cookies

Chocolate No-Peanut-Butter Paleo Cookies

Yield: 20-25 Cookies

Ingredients

  • 1 cup sunflower seed butter (or nut butter of your choice)
  • 1/2 cup cacao powder
  • 1 teaspoon baking soda
  • 2 large organic eggs
  • 2/3 cup pure maple syrup
  • 1/2 cup tapioca flour
  • 3/4 cup dark chocolate chips (such as Enjoy Life or a dark chocolate bar chopped up from Eating Evolved)

Directions

  1. Preheat the oven to 375°F.
  2. Add the sunflower butter (or your choice of nut butter, crunchy almond butter works great but remember all nut flavors provide a slightly different flavor) to a large mixing bowl. Using a hand mixer, mix in the cacao powder and baking soda.
  3. Crack and whisk the eggs and maple syrup in a small bowl. Add the eggs to the sunflower butter mixture and blend well.
  4. Add the tapioca flour and mix until well combined.
  5. Stir in the chocolate chips by hand.
  6. Using an ice cream scoop, spoon a scoop of dough onto a baking stone or parchment paper lined baking sheet. Bake for 10 minutes, transfer to a cookie rack to rest and repeat until all the dough is used.
  7. Chow down! Or, store leftovers in a sealed glass container.
  8. Enjoy! :)
