Who needs chips dunked in questionable salsa that came out of a jar when you can dunk these delicious duck gizzards in a Spicy Paleo Marinara Sauce?

Where to Buy Duck Gizzards?

I got mine from U.S. Wellness Meats although if you ask in the meat department of your grocery store or local butcher, you may find some specialty cuts available. If all else fails you can always sub in a different type of gizzard. I’m a big fan of chicken gizzards but duck gizzards are larger and, I think, super tasty. :)

Where’d All The Organs Go?

Organ meats, including gizzards, have been sadly neglected in America for the past century or so. We’re not sure why this change happened, but we do know that it is unfortunate for our health. You’ll be hard pressed to find anything more nutritious than organ meats.

In addition to providing a healthy helping of saturated fat and protein, they have some of the highest concentrations of micronutrients, including iron, selenium, and a whole host of B vitamins.

Don’t Knock It Till You Try It

Thanks to our recent organ meat-deficient diet, many people have a hard time getting over the “Ick!” factor to get their dose of organs. If that’s you, this recipe is sure to help you out.

By the time you get done coating the gizzards in egg and tapioca flour, then dipping it in spicy marinara sauce, you won’t even remember that you’re eating an animal’s insides.

Crispy Curry Duck Gizzards with Spicy Paleo Marinara Sauce

Yield: 2 Servings

Ingredients

  • 26oz chopped tomatoes
  • 1/2 cup onion, chopped
  • 1 tablespoon raw honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground cloves
  • 8 whole allspice
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon fine sea salt
  • a pinch ground ginger
  • 2 tablespoons tapioca flour
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon sweet curry powder
  • 1 large organic egg
  • 1/2lb duck gizzards

Directions

  1. Preheat the oven to 350°F.
  2. First prepare the Spicy Marinara (dipping) Sauce by adding the chopped tomatoes, onion, raw honey, minced garlic, onion powder, cloves, allspice, cayenne pepper, sea salt and ground ginger to a medium-to-large-sized saucepan over medium heat. Stir to combine and bring to a boil.
  3. Reduce heat to medium-low and simmer for 30 minutes.
  4. Meanwhile, in a small bowl combine tapioca flour, fine sea salt and curry powder.
  5. In a second bowl, crack and whisk the egg.
  6. Pat dry the duck gizzards between two paper towels.
  7. Dip each duck gizzard in the egg wash, remove and let egg drip off. Transfer gizzard to the tapioca mixture and toss to coat on all sides. Transfer coated gizzard to a small to medium-sized cast iron (or oven-proof skillet). Once all gizzards are added to the pan, turn heat to medium and brown gizzards on both sides for 1-2 minutes. Transfer the pan to the oven and bake for 30 minutes.
  8. When the Sauce is reduced by half and thick, remove it from heat. Use an immersion blender on low to mix the sauce until smooth. Transfer to a bowl to serve.
  9. Remove pan from the oven and let rest, transfer to a plate and serve with Spicy Paleo Marinara Sauce.
  10. Enjoy! :)
