This salad may look elegant but I guarantee you can have it made and on the table in less than 10 minutes.
With all the stresses in our modern lives, a lot of us just don’t want to take the time to make a side salad. Making all our own meals is time-consuming enough without adding extra dishes to every meal, right?

The good news is, making a salad doesn’t have to take a huge chunk of time out of your day.
Depending on what you’re making, you can throw this salad together while your main dish is baking in the oven or simmering on the stove. That way, it doesn’t take any extra time at all!
How To Get Ahead
By chopping up all your veggies right after you buy them and storing them raw and ready in the fridge, you’ve shortened the process even more so your salad prep goes even faster!
The trick to making a quick salad is to keep it simple. You don’t have to dress up your salad with lots of fancy ingredients (although you certainly can, if you’re feeling creative).
Just a few fresh veggies (maybe what’s currently arrived in your CSA box) mixed along with some seasonings and some quality olive oil will do.
Buying pre-made dressing is another way to speed up the process, but you can never be quite sure what’s in them. That’s why I recommend making your own dressing. It’ll only take a minute or two, especially if you keep the olive oil and vinegar on your counter like I do, for easy access! :)
It will taste better than anything you’ll find in the store and you get the satisfaction of knowing exactly what you’re putting in your body.
