Steak and salad is pretty much the quintessential Paleo meal. It’s awesome, but sometimes you need to change it up a little. Instead, try making lamb chops with a side of sautéed veggies.

Seasoning your veggies is another way to switch it up. You don’t have to eat the same old salad day in and day out.

Onion is a great way to add some extra flavor to your food and it’s really good for you (hence the reason I add it to everything). It’s full of organosulfur compounds, which have been studied for their ability to improve glucose tolerance and prevent heart disease. They may even be able to fight or prevent cancer.

Herbs and spices are another great way to add some variety to your diet. They’re inexpensive and healthy. They come loaded with antibiotics and have been shown to improve blood pressure and glucose tolerance. Fresh herbs are always preferable, as they contain more nutrients and flavor, but dried works too, if that’s all you can get your hands on.

The best part about this meal is how simple it is. Making your own food doesn’t have to mean spending all day in the kitchen. If you cook the meat and veggies at the same time, this meal should take you no more than half an hour to throw together, making it a perfect mid-week meal.

Lamb Loin Chops with Zucchini

Lamb Loin Chops with Zucchini

Yield: 2 Servings

Ingredients

  • 4 (1.5lbs) bone in grass-fed lamb loin chops
  • coarse ground sea salt, to taste
  • 2 zucchini, sliced
  • 1/2 onion, sliced
  • 1 clove garlic, minced
  • dried thyme

Directions

  1. Heat a 10.5 inch cast-iron grill pan over medium heat until it just starts to smoke.
  2. Season lamb chops with sea salt and add to the pan seasoned side down. Cook for 4 minutes, flip and season the side facing you. Cook for 5 more minutes and cover with a lid to cook interior to desired doneness (1-6 more minutes). Remove chops from heat, transfer to a plate and let rest 1-2 minutes.
  3. In an 8 or 9-inch skillet over medium heat, add zucchini, onion, garlic and season with dried thyme. Stir continuously until zucchini is fully cooked (7-10 minutes).
  4. Serve lamb chops alongside sautéed zucchini.
  5. Enjoy! :)
