Not only is this taco recipe completely Paleo, but it will make you forget all about those cravings you used to get for Taco Bell.

Reducing Carbs? No Problem!

The tortilla shells are Paleo-friendly, but they are a little heavy on the carbs. If you don’t want the extra carbs, you can always pile the meat and veggies onto lettuce leaves to make a lettuce wrap. Or you can simply serve it on a bed of greens. Whatever strikes your fancy.

Make Use Of Your Kitchen Time

If the thought of cooking all this feels daunting, it shouldn’t. We’re going to let the oven do most of the work on the lamb shoulder (and if you’re not sure when it’s done, this nifty table can help).

While that’s cooking, you can make the Paleo Tortillas and Homemade Harissa. You can also make the Harissa ahead of time and just pull it out when you’re ready to eat. Or even pick up a Paleo-friendly brand of Harissa if you’d like to speed things up.

Also, keep in mind we’re talking 4 pounds of meat here, plus veggies. Unless you’re feeding a large party (or Jeff) this recipe should last you a while. Make it over the weekend and you’ll have meals for days to come.

Roasted Lamb Shoulder Paleo Tacos

Roasted Paleo Lamb Shoulder Tacos with Harissa

Yield: 2-4 Servings

Ingredients

  • 2 onions, chopped
  • 4lb grassfed lamb shoulder roast
  • sea salt, to taste
  • 1 head garlic
  • 1 bunch organic fresh thyme
  • 1/2 cup duck fat (or your choice of cooking fat), melted
  • 1 carrot, peeled, quartered and thinly sliced
  • 1/4 cup red onion, minced
  • fresh cilantro
  • 1 lime
  • Paleo tortillas (optional)
  • Homemade Harissa (optional)

Directions

  1. Preheat the oven to 500°F.
  2. Chop onions and add to the bottom of a large baking dish. (Note: If the dish has a lid you get bonus points.)
  3. Season the lamb shoulder with sea salt on all sides. Lay it on top of the onions.
  4. Crush each clove of garlic to remove the shell and place each clove around the outside of the lamb.
  5. Lay a few thyme stems under the lamb and the rest on top and around the sides.
  6. Pour the melted duck fat, or your choice of cooking fat, across the top of the lamb shoulder.
  7. Cover with lid or aluminum foil, reduce the heat to 325°F and cook for 3 hours or until the meat tears easily with two forks. For a precise temperature of doneness use a meat thermometer to measure 145°F for Medium-Rare, 160°F for Medium and 170°F for Well-Done.)
  8. Remove dish from oven and let rest 10-15 minutes with top off.
  9. Shred meat, top with sliced carrot, minced red onion, fresh cilantro and a drizzle of fresh lime juice. To round out the meal serve inside Paleo Tortillas topped with Homemade Harissa.
  10. Enjoy! :)
