If your parents ever fed you broth when you were sick, it was because they knew that was the best way to get you healthy and strong again. With this soup, you can get ahead of the game by giving your immune system that extra boost before anything comes along.

There’s a reason we all want to reach for that bowl of rich soup in the winter, and it’s not just because it’s warm. People have been drinking broth for millennia as comfort food and medicine and it’s effective as both. So trust your instincts and settle down with a big bowl of this Paleo Soup.

This paleo soup combines all your favorite flavors into one pot. The rich ham and mushroom combined with the zesty lemon make this recipe anything but ordinary. You can moderate the amount of lemon you use to make it as mild or as tangy as you like.

This recipe is also quick and easy to make. Because you’re using a pre-cooked ham steak, you just have to toss it in with the other ingredients, bring the whole thing to a simmer, and you’re done! No simmering for hours on end or waiting all day for your slow cooker. This makes it a perfect meal for those hectic weeknights when you just need to get something on the table fast.

Lemon, Mushroom & Ham Paleo Soup

Yield: 3-4 Servings

Ingredients

  • 3 tablespoons grass-fed butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1lb cooked ham steak, cubed
  • 1 portobello mushroom, chopped
  • 3 cups beef broth
  • 1 teaspoon coarse ground sea salt
  • 1/2 cup fresh curly parsley, minced
  • 1 lemon
  • pinch of ground ginger

Directions

  1. Melt butter in a 3 quart pot over medium heat. Add onion & garlic and cook until onions are soft, tossing occasionally.
  2. Add ham steak, mushroom, beef broth, sea salt, fresh parsley, juice from half the lemon (if you're a fan of lemon, juice the whole thing) and ground ginger into the pot. Stir to combine. Increase heat to medium-high and bring to a simmer.
  3. Remove from heat and serve.
  4. Enjoy! :)
