As if you couldn’t tell already but I really enjoy cooking. :)

I made this salad for my friend Kathleen’s oldest son Kyle for his first birthday party. It was a huge hit with everyone in attendance and she has asked me to bring this salad regularly to all their family parties.

Kathleen asked me to make it again when her younger son, Korey was baptized. That was when this recipe kicked off the launch of PaleoPorn.com, way back in 2010!

Kathleen’s family was asking for the recipe and by publishing it here, I was able to share it most conveniently with everyone who wanted it.

Marla’s Famous Spinach Salad

Tracking Paleo Recipes

It really bothers me when I make something that winds up tasting really good and then can’t remember how I made it. So over the years I have come up with different ways to track what I’m making in the kitchen.

I used to write everything done once I left the kitchen on little scraps of paper. But then I would lose those pieces of paper and the recipes would never make it farther than our plates.

Most recently I’ve been using my iPad in the kitchen along with Evernote to save my notes digitally while I’m working.

I guess you could say Paleo Porn has become my digital recipe box which I now share with all of you. And I’m so excited for you to be able to try what I’m making in my kitchen! :)

Marla's Famous Spinach Salad

Yield: 4-6 Servings

Ingredients

  • 2-3 cups organic baby spinach
  • 1 small head purple cabbage, chopped
  • 16 ounces of fresh organic strawberries, sliced
  • 1 mango, chopped
  • 8 ounces mozzarella cheese, cubed (optional)
  • 1 tablespoon raw honey
  • coarse ground black pepper, to taste
  • balsamic vinegar

Directions

  1. Rinse spinach, transfer to a cutting board, chop and transfer to a medium size bowl.
  2. Rinse and peal off the outer few layers of the cabbage. Transfer to a cutting board and chop the cabbage. Then add it to the top of the spinach in the bowl.
  3. Rinse and hull strawberries. Transfer to cutting board and slice. Chop the mango and add both fruits to the bowl on top of the spinach.
  4. Cube the mozzarella cheese, if using, and add to the bowl.
  5. Sprinkle black pepper over mozzarella, add honey and pour the balsamic vinegar from one side of the bowl to the other, from front to back.
  6. Toss the mixture and taste if more honey or vinegar is necessary.
  7. Enjoy! :)
