We’re not very big on Paleo treats, as they still tend to raise blood sugar, which can cause all sorts of problems. However, these Paleo Apple Muffins with Pecans are so low in sugar, they make a great treat while remaining low on the glycemic index.
I don’t normally use the sweeter varieties of apple. I tend to stick to the hardier, more tart varieties to keep my blood sugar low. These muffins don’t have a lot of sugar though, so I used a sweeter apple as a source of natural sugar. The result is a Paleo-friendly treat that’s not too sweet.

Start Your Day With Protein & Fat
We don’t normally like to start the day off with sugar, but we know there are plenty of people out there who miss their morning pastries. If that’s you, these Paleo muffins are a great way to get that baked goodness in to your Paleo breakfast without having to worry about crashing from the sugar high in a couple hours.
I prepared these Paleo muffins and served them as a birthday treat for a special occasion brunch.
Apples to Apples
Apples by themselves make for a pretty sweet snack, but by adding them to these Paleo muffins, you’re eating them with enough fat and protein that you don’t really have to worry about the sugar in the apple.
Of course, just eating an apple with your Paleo breakfast works too, but these muffins make a more delicious addition to your morning meal and you’re not eating the apple all at once (unless you eat all 12 muffins at once, which I don’t recommend).
A Delicious Dessert
You don’t have to keep these Paleo muffins to just the morning though. You can eat these babies as a snack between meals, or even dessert after lunch or dinner if you want. Whenever that craving for something sweet and chewy hits, reach for one of these Paleo muffins to satisfy your sweet tooth.
