Give your organic potatoes a scrub and keep the skins on for easy prep of this paleo breakfast side dish.

Your Week Day Paleo Breakfast

Bring some homemade goodness to work with you! After you whip up a double or triple batch of this paleo breakfast potato recipe, separate individual servings into containers and store them in the fridge.

Duck Egg & Veggie Paleo Breakfast MuffinsGarlic & Herb Paleo Breakfast Potatoes

They taste great cold and of course if you have the chance to warm them up, then they’ll taste even better.

They pair nicely with traveling eggs such as egg muffins, deviled eggs, pickled eggs or just plain hard boiled eggs left in their shell until ready to eat.

Or maybe you’d rather go the muffin route with something like my Paleo Apple Muffins.

Prepare For The Entire Week At Once

If you whip together a batch of any of those muffins or eggs along with these potatoes, all at the same time, you could have yourself a weeks worth of breakfast.

Not only will that leave you prepared for the entire week, it will only take a little over an hour until you’re transfering everything to the fridge and moving onto the next task you need to tackle.

Now that’s a real, whole foods breakfast any busy person can handle.

Don’t Forget To Bake That Bacon

Once you’ve got your oven warmed up and you have a little space, you might as well throw in a few slices of bacon to crisp up in the oven (it tastes much better that way). It only takes about 10 minutes and makes for a delicious addition to the potatoes.

With your fat and protein filled breakfast, you’ll be breaking the fast the right way. By not starting your day with sugar you’ll be fueling your body and preparing for whatever the day can throw at you.

Garlic & Herb Paleo Breakfast Potatoes

Garlic & Herb Paleo Breakfast Potatoes

Yield: 3-4 Servings

Ingredients

  • 2-3lbs organic red potatoes
  • 3-4 cloves garlic, minced
  • coarse ground sea salt, to taste
  • dried herbs, to taste
  • 3 teaspoons lard

Directions

  1. Preheat the oven to 350°F.
  2. Cut the potatoes in half and slice each half, making sure the slices are all the same thickness so they cook evenly. Add cut potatoes to a glass oblong baking dish.
  3. Scatter minced garlic across the top of the potatoes and season with dried herbs and sea salt. (Choose the dried herb of your choice: dill, oregano, basil, savory, chervil, rosemary, thyme, sage, chives, tarragon, etc. Combine a few or change it up each time to produce a different flavor each time.)
  4. Scatter half a spoon full of lard (or your choice of fat) evenly across the top of the potatoes and transfer the dish to the oven.
  5. Bake for 30 minutes and toss the potatoes. Rotate the dish in the oven and bake another 30 minutes or until the tops start to brown.
  6. Remove the dish from the oven and serve warm.
  7. Enjoy! :)
