These Paleo Breakfast Tacos are slightly more time-consuming than your average Paleo breakfast if you are making the Paleo tortillas, but they are definitely worth the wait!
With that said, this recipe may be best saved for a weekend or a morning when you’re not in a rush.

Where To Buy Paleo Tortillas
There are a couple businesses who are making clean-ingredient Paleo tortillas using whole-food ingredients and both are Austin based.
Siete Family Foods and Pinkie’s Paleotillas are the ones we’ve tried so far.
Alternatives To The Tortilla
If you want a lower-carb version, you can always use a lettuce leaf (I recommend Boston lettuce) instead of tortillas.
You can also simply skip the shell altogether and make Paleo Breakfast Taco Bowls!
Cooking Demo Prep
I made these breakfast tacos for the Paleo Porn team when I was practicing for my cooking demo at Paleo f(x) in Austin. I wanted to take the tortillas on a final test-run before presenting them on stage and I wanted to make sure they were good when made using water instead of almond or coconut milk.
Answer: water definitely works. However, do note that they come out looking and feeling a little more like crèpes rather than tacos.
Regardless, I didn’t hear any complaints! :)

It was nice to get a little help in the kitchen from Alison while making this meal for all four of us. So I would recommend inviting some friends over for brunch and enjoying the time in the kitchen cooking together if you want to lessen the load.
The onions will take a while to caramelize, but they’re definitely worth it in the end. By taking the extra time to brown them, they go from pungent to just a little bit sweet and that makes all the difference in these Paleo Breakfast Tacos!
You’ll end up with some loaded taco shells that are pretty filling, but that doesn’t necessarily mean you’ll have leftovers. These babies go fast and your friends and/or family will be fighting over the last ones.
The good news is they’ll keep you full and energized all day long.
So if you thought going Paleo would mean you could never have tacos again, or that your Paleo breakfast would always be boring, think again.
With a little creativity, you can mix and match all sorts of meats, eggs, fruits, and veggies to breath new energy into any meal!
