Sometimes you just need something chewy and chocolatey. When that’s the case, whip up a batch of these Paleo Brownies to get you through.

Eating healthy doesn’t have to mean feeling deprived. Chocolate actually has a number of health benefits, such as improving blood pressure, glucose tolerance, and reducing the risk of heart disease. That’s great news if you’re a chocolate-lover like us.

Mixing chocolate with too much sugar can reduce some of these benefits (though not all). It can also throw off those of us who are trying to cut out sugar.

This Is No Sugar Bomb

That’s why this recipe only calls for a small amount of honey and some vanilla as sweeteners. It makes for a very dense, chocolatey dessert that won’t spike your blood sugar.

To make this dish even more low-carb, leave the coconut sugar off the topping.

Top It Off

The topping is just what gives these brownies their edge.

The crunchy hazelnuts complement the chewy brownies perfectly. It’s that perfect combination that will keep you coming back for more.

They’re so good, you won’t believe they’re healthy.

Paleo Brownies

Paleo Brownies

Yield: 12-15 Brownies

Ingredients

  • 1/2 cup ghee
  • 5oz baking chocolate
  • 1 teaspoon raw honey
  • 1/4 cup cocoa powder
  • 4 large organic eggs
  • 1 teaspoon coarse ground sea salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla (or scrape from 1 vanilla bean)
  • 1/8 teaspoon ginger
  • 2 cups blanched almond flour
  • 1/4 cup coconut flour
  • 1/3 cup raw hazelnuts, chopped
  • organic coconut palm sugar, to taste (optional)

Directions

  1. Preheat the oven to 350°F.
  2. Add the ghee, baking chocolate and raw honey to a small saucepan over low heat, until melted.
  3. Remove from heat, stir in the cocoa powder and let cool.
  4. In a large mixing bowl whisk the eggs, sea salt, baking soda, vanilla and ginger.
  5. Stir in the almond flour, coconut flour and cooled chocolate mixture until fully combined.
  6. Line a 2-quart, 7x11inch, oblong glass baking dish with parchment paper.
  7. Pour the brownie batter into the dish and spread with a spoon. Pat down evenly across the top and sides with your hands, to fill any air gaps.
  8. Top the batter with the chopped raw hazelnuts and transfer to the oven.
  9. Bake for 30 minutes.
  10. Cut brownies into squares and serve topped with organic coconut palm sugar.
  11. Enjoy! :)
