This recipe is an easy way to impress all your friends at your next potluck. It’s all about the presentation.

An eggplant and chorizo stir fry may not sound too impressive, but when you serve it on top of some Cauliflower-Parsnip Mash and finish the entire dish off with a little Avocado Crema, voila! You have one fancy-looking meal!

The Avocado Crema even sounds fancy, but it’s really easy to make.

All it takes are a few ingredients plus the use of your food processor and you’re ready to top off your dish with a creamy, delicious, Avocado Crema.

Don’t worry. I won’t tell your friends how easy it is. We can let them think you slaved all day in the kitchen over this meal. ;)

What is Avocado Crema?

Avocado Crema is a type of creamy spread. File it under condiments.

It usually consists of avocado, some type of dairy (usually sour cream or Greek yogurt) and seasonings.

Instead of using either one of those ingredients, I made this dairy-free by using Primal Mayo, which you can pick up from Thrive Market cheaper than you can anywhere else. It gives you the same thick, creamy texture, while being easier on your gut, especially for those who can’t tolerate (or just choose to avoid) dairy.

Avocado Crema goes great on top of this Eggplant Chorizo Stir Fry, but there’s no need to stop there.

How To Use Your Leftover Avocado Crema

You can top just about any of your favorite dishes with it: put it on your eggs, on your Paleo Tacos, smear some on some Paleo crackers or use it as a healthy vegetable dip.

Once you have a container of leftover Crema in your fridge, you’ll find all sorts of uses for it! :)

Paleo Eggplant Chorizo Stir Fry with Avocado Crema

Eggplant Chorizo Stir Fry with Avocado Crema

Yield: 3-4 Servings

Ingredients

  • 1 onion, sliced
  • 1 eggplant, sliced
  • coriander, to taste
  • garlic powder, to taste
  • coarse ground sea salt, to taste
  • 12oz package Niman Ranch Chorizo Sausage, sliced
  • 1 avocado
  • 1 tablespoon Primal Mayo, or (make your own)
  • 1 teaspoon coriander
  • 2 Persian cucumbers
  • 3/4 teaspoon coarse ground sea salt

Directions

  1. Add onion and eggplant to a 10.25-inch cast-iron skillet over medium heat. Season with coriander, garlic powder and sea salt and stir to combine.
  2. After 7-10 minutes add sliced chorizo sausage and again stir to combine.
  3. While the sausage is browning and the onion and eggplant are cooking together, whip out your food processor to make the Avocado Crema.
  4. Add the avocado, mayo, coriander, cucumbers and sea salt to the food processor and blitz until everything is smooth.
  5. Serve eggplant chorizo stir-fry over Cauliflower or Cauliflower-Parsnip Mash, topped with Avocado Crema.
  6. Enjoy! :)
