This recipe is an easy way to impress all your friends at your next potluck. It’s all about the presentation.
An eggplant and chorizo stir fry may not sound too impressive, but when you serve it on top of some Cauliflower-Parsnip Mash and finish the entire dish off with a little Avocado Crema, voila! You have one fancy-looking meal!


The Avocado Crema even sounds fancy, but it’s really easy to make.
All it takes are a few ingredients plus the use of your food processor and you’re ready to top off your dish with a creamy, delicious, Avocado Crema.
Don’t worry. I won’t tell your friends how easy it is. We can let them think you slaved all day in the kitchen over this meal. ;)
What is Avocado Crema?
Avocado Crema is a type of creamy spread. File it under condiments.
It usually consists of avocado, some type of dairy (usually sour cream or Greek yogurt) and seasonings.
Instead of using either one of those ingredients, I made this dairy-free by using Primal Mayo, which you can pick up from Thrive Market cheaper than you can anywhere else. It gives you the same thick, creamy texture, while being easier on your gut, especially for those who can’t tolerate (or just choose to avoid) dairy.
Avocado Crema goes great on top of this Eggplant Chorizo Stir Fry, but there’s no need to stop there.
How To Use Your Leftover Avocado Crema
You can top just about any of your favorite dishes with it: put it on your eggs, on your Paleo Tacos, smear some on some Paleo crackers or use it as a healthy vegetable dip.
Once you have a container of leftover Crema in your fridge, you’ll find all sorts of uses for it! :)
