I don’t know about you but when I’m given a choice out of all the different chicken parts, I tend to typically reach for the legs. Roll em in egg and coconut flour and sprinkle some sesame seeds on top and you’ve got a whole new flavor profile to try with this Paleo Fried Chicken recipe. ‘Paleo fried’ meaning baked, but you get the idea. :)

Paleo Fried Chicken

Chicken is always good for a party…saaaay maybe a Memorial day party. Instead of ordering a bucket of fried chicken from the local delivery place, pick up a bag-o-legs from the store and bake these little guys for your guests.

I promise you won’t need a stockpile of napkins while you’re eating them. Napkins are a funny invention don’tcha think? Personally I don’t stock them in the house. I prefer those half paper towels and they serve dual purpose.

Paleo Fried Chicken

Yield: 3-4 Servings

Ingredients

  • 2 large organic eggs
  • 1/4-1/2 cup coconut flour
  • 1 teaspoon coarse ground sea salt
  • 1/4 teaspoon ground ginger
  • 1 1/2lbs pasture-raised chicken legs
  • sesame oil
  • sesame seeds, to taste
  • coarse ground black pepper, to taste

Directions

  1. Preheat the oven to 375°F.
  2. Crack eggs in a bowl, whisk and set aside.
  3. Add coconut flour, sea salt and ginger to a shallow, rimmed dish or bowl and stir to combine.
  4. Dip each chicken leg in the egg mixture, roll the chicken in the flour mixture until coated and transfer to a parchment paper lined baking sheet or glass dish. Continue until all legs are coated. (Note: More flour, salt and ginger may be necessary.)
  5. Drizzle each leg with sesame oil and a sprinkling of sesame seeds and black pepper then transfer to the oven.
  6. Bake for 1 hour, or until chicken is fully cooked.
  7. Remove from oven and serve.
  8. Enjoy! :)
