This is the ultimate one-dish meal, I call it Paleo Ground Pork in a Pan, which is uber creative I know. ;)
While Jeff, Dave & I were in Portland for the Word Domination Summit this year we stayed in a great little place that I found on Airbnb.
I cooked this up in our kitchen one night for dinner. James, the home owner, had a garden in his backyard and while I was making dinner he came in with some purple kohlrabi and offered it up for us to try. I’ve tried green kohlrabi before, but never purple (my favorite color!) so of course I took him up on his offer because I was intrigued to find out if the color would make a difference in the taste. Sadly I don’t think it did, but if I ever had the choice between the green or purple I would always chose purple. ALWAYS! :)
I served this ground pork in a pan with a simple kale salad along with some sliced kohlrabi and slices of a white peach, side by side. The flavors of the kohlrabi and pear matched quite well. I definitely recommend giving that combination a try!
If you try this Paleo Ground Pork in a Pan recipe, let me know how it turns out for ya. On those nights when you need a quick meal, this one definitely fills the void.
Paleo Ground Pork in a Pan
Ingredients
- 1 tablespoon grassfed butter
- 1 cup onion, minced
- 5 cloves garlic, minced
- 6oz can tomato paste
- 1.5 lbs ground pork
- 1 egg, beaten
- sea salt and black pepper, to taste
- cayenne pepper, to taste
Directions
- Melt butter in a large skillet over medium heat.
- Add onion and garlic and stir consistently for 1-2 minutes.
- Add tomato paste, ground pork and beaten egg to the skillet. Season with sea salt and black pepper. Mix everything well.
- Using a wooden spoon press down on the mixture into the pan so the pork fills the entire surface of the skillet. It should look like one big burger! Season the top of the mixture with a dash of cayenne pepper.
- Let the pork cook for 4-5 minutes then flip it over. (If it doesn’t all flip over easily, don’t worry, in the final cooking time it will combine back together.) Leave until the meat is cooked throughout.
- When done, remove from heat, slice into quarters and serve.
- Enjoy! :)
