What are you cooking up during this Labor day weekend? How about some Paleo Jalapeño burgers to throw on the grill?
You may or may not have noticed the lack of grilling recipes here but the grill is not my go-to appliance (if you’d even call a grill an appliance..well I just did, so let’s go with it). :)


So, if you’re like me, you don’t really need a grill to make these. A broiler pan for the oven, grill pan or plain jane skillet for the stove top will make a perfect stand in for the grill.
And who needs a bun? I mean really! All you need is a nice big piece of lettuce (or two) maybe some grilled onions to top it off but really, these spicy little dudes taste delicious all by their lonesome. We ate them on a plate with a fork if you were curious. ;)
Today Jeff & I went to another Paleo Chicago potluck. Everyone brought a homemade Paleo dish and everything tasted fantastic. I even left with an herb bouquet, thanks to Judy, who brought me a huge sampling from her garden! They were all so fragrant and I couldn’t wait to try some of the ones I’d never heard of including pineapple sage, purple ruffle basil, German thyme, Mexican tarragon, and the list goes on. :)
I brought my Baked Chile Relleno from Los Paleo and the Cauliflower Rainbow Salad from the First Edition of Pigskin Paleo. While we were eating Judy asked me where the cauliflower was in the salad. She didn’t realize that the cauliflower was shredded and mixed throughout to create the base. Then I threw her off even more by telling her I used purple cauliflower instead of white, to add some additional color. :)
