Sneak some liver into your diet by including it in this Paleo Meatloaf.
It’s true, liver is making a comeback. As so often happens, after enjoying its time as one of man’s most prized foods, liver somehow fell off the menu (at least here in the United States).

Now that we once again recognize liver as a nutritional powerhouse, many of us are struggling to reconcile that knowledge with a palate that has become accustomed to eating primarily muscle meat.
If you’re not a fan of eating liver outright, another way to consume it is to hide it and prepare your Paleo Meatloaf with Liver.
By using more ground beef than liver, and plenty of vegetables and seasonings, you can trick yourself into eating your nutritious liver.
In the end the meatloaf will not look any different from the kind your mom used to make when you were growing up. That’s all you need to know to get yourself (and your kids, if you have any) to chow down, all while consuming the loads of vitamins and minerals that come packed in liver.
Quantity Matters
The amount of liver you add to the ground beef will make a difference in the flavor so if you’re first starting out and you’re not sure if you’re a fan or not of the taste, go slow and just add a little bit at first. I’m talking 1-2 ounces, max!
