Sneak some liver into your diet by including it in this Paleo Meatloaf.

It’s true, liver is making a comeback. As so often happens, after enjoying its time as one of man’s most prized foods, liver somehow fell off the menu (at least here in the United States).

Paleo Meatloaf with Liver

Now that we once again recognize liver as a nutritional powerhouse, many of us are struggling to reconcile that knowledge with a palate that has become accustomed to eating primarily muscle meat.

If you’re not a fan of eating liver outright, another way to consume it is to hide it and prepare your Paleo Meatloaf with Liver.

By using more ground beef than liver, and plenty of vegetables and seasonings, you can trick yourself into eating your nutritious liver.

In the end the meatloaf will not look any different from the kind your mom used to make when you were growing up. That’s all you need to know to get yourself (and your kids, if you have any) to chow down, all while consuming the loads of vitamins and minerals that come packed in liver.

Quantity Matters

The amount of liver you add to the ground beef will make a difference in the flavor so if you’re first starting out and you’re not sure if you’re a fan or not of the taste, go slow and just add a little bit at first. I’m talking 1-2 ounces, max!

If you’re eager to increase your liver intake, then definitely jump right in with the amount I used (and mention below).

Paleo Meatloaf with Liver

Paleo Meatloaf with Liver

Yield: 8-10 Servings

Ingredients

  • 2lbs grass-fed ground beef
  • 4.5oz grass-fed bison liver, minced
  • 1 small onion, minced
  • 3 rainbow carrots, peeled & minced
  • 5 cloves garlic, minced
  • 1/2 green bell pepper, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon coarse ground sea salt
  • 1 teaspoon Chipotle paste (or tomato paste)

Directions

  1. Preheat the oven to 350°F.
  2. Add all ingredients to a large mixing bowl. Stir to combine with a large spoon, or do like I do and dig in with both hands to completely break apart the ground beef and fully combine all ingredients.
  3. Press the combined mixture of meat into a glass 1.5 quart loaf pan. Press down evenly throughout the transfer from the bowl to the pan so that it all fits.
  4. Season the top of the meatloaf with extra basil & oregano.
  5. Place the pan on a rimmed baking sheet. (This step is necessary since I like to fill my pan to the very top, while cooking the juices will flow up and over the pan and the rimmed baking sheet will catch those juices. If you don't place it on something so the juices can be caught your oven will become a mess and may start smoking from the liquid being released.)
  6. Bake for 1 hour and test with a toothpick to see if the center is fully cooked. If the toothpick does not come out clean, continue cooking and testing until it does.
  7. Remove the pan from the oven and let rest for 5 minutes before slicing and serving.
  8. Enjoy! :)
