Don’t listen to those naysayers who claim that eggs are full of artery-clogging cholesterol. The truth is that the cholesterol we eat only rarely makes it to our blood stream, and cholesterol-rich foods (such as eggs and meat) are usually packed with other vital nutrients.
Become The Omelet Whisperer
A lot of people are intimidated by the thought of making an omelet, but they shouldn’t be. It’s a lot easier than it sounds.
The trick is to make sure the eggs are cooked through before you flip them.
Once you’ve managed that, all you have to do is wait for the other side to finish cooking, stuff the middle with delicious things, fold it over and ta da! You’ve got yourself a fabulous and beautiful breakfast to boot!
Choose Your Own Adventure Omelet
One of the best things about an omelet is their versatility. You can stuff them (or top them off) with anything you want and have a different Paleo breakfast every day of the week.
I love stuffing my omelet full of veggies, but you can always toss in meat or cheese, if you can tolerate dairy. Top them off with your favorite dried herb, a pinch of sea salt, a spoonful of pesto or homemade salsa.
Just restricting yourself to vegetables is hardly a limitation. From dark leafy greens, to garlic and onions, to the many varieties of peppers, there’s no end to the options available.
A Full Paleo Breakfast
I served this omelet with a side of sliced tomato and avocado to add a nice serving of fat.
Bacon always go great with a serving of eggs or you could serve a side of hash browns and toast. The combinations are endless!
