Now, I had every intention of making a nice big bowl of onion rings but that’s tough to do when you have only one small onion in your pantry.
I suspect the store had more but I live in Chicago and it’s freezing right now so…
I made do with one lonely red onion for this batch of baked Paleo onion rings.
BUT what this onion lacked in proportion, it made up for in pigment. The bright purple {my favorite color of all, clearly :)} makes this treat tasty AND tempting by adding a punch of color.
If you’re familiar with my Paleo diet recipes then you know I love me some onions (and garlic!) and I typically pick up around 4-6 onions every time I go shopping. But, again, I live in Chicago and it’s freezing which means no grocery runs.
Actually, that’s not entirely true. We did stop at the grocery store on Sunday…along with every other resident of the city of Chicago apparently. ;)
After waiting in line, with six beautiful onions in my basket, I realized that at the pace we were going I wouldn’t reach check out till the end of the week! That’s when I said goodbye to my sweet onions and went home empty-handed.
BTW, if you have to shop on the weekends when the stores are packed, I have two words for you. Order online. So much easier.
If this is what grocery shopping was always like, I could totally understand why people would hate doing it. Personally, I LOVE grocery shopping but I NEVER shop at peak hours and order as much as I can online.
Pro Tip: Shop during off hours, if you can.
So, I’m a big fan of Trader Joe’s almond meal. I will typically whip up my own nut meal when I need it. It’s as easy as pulsing a bunch of raw nuts in the food processor. A couple seconds later you’ve got yourself nut meal. But it sure is nice to have some pre-made flour ready to use on the fly and for those moments I enjoy Trader Joe’s almond (and now, cashew) meal.
With my last onion and the brand-spankin-new bag of cashew flour calling my name in my pantry I decided to give Paleo onion rings a go! I also tested these with tapioca starch. The tapioca starch firmed up nicely but the seasonings didn’t blend as well as when I used the cashew meal, so I wouldn’t recommend you use it.
You can serve these baked Paleo onion rings with some homemade ketchup, a garlic aioli, or use them as a garnish for a burger and call it a day.
