You know those days when you’re just too busy? When you feel like you can’t even spend the time to think about what you need to do next, because thinking is wasting time? On those days, for me, the last thing I want to do is make some extravagant meal.
On those days I’ll typically grab a skillet and just throw stuff in, willie nilly, till it seems like I’m done. That’s how I came up with my Pork in a Pan recipe.
When my brain is on overload I try to stick to something simple for dinner, like this Paleo Pork Chops and Apples recipe.
Grab a skillet and fry those chops up. Serve them with a big ol’ salad, or whatever your go-to side is, and just be done with it.
Being in the kitchen for me is like therapy. I just go, do what I need to do, block all else out and basically stop thinking about anything I had on my mind before.
I let my hands do the work and it’s truly the only time my brain is really calm.
Jeff isn’t a fan of fruit paired with savory, so I don’t typically mix those flavors often but he really enjoyed this combination and I hope you do too.
