You know those days when you’re just too busy? When you feel like you can’t even spend the time to think about what you need to do next, because thinking is wasting time? On those days, for me, the last thing I want to do is make some extravagant meal.

Paleo Pork Chops and Apples

On those days I’ll typically grab a skillet and just throw stuff in, willie nilly, till it seems like I’m done. That’s how I came up with my Pork in a Pan recipe.

Paleo Pork Chops and Apples

When my brain is on overload I try to stick to something simple for dinner, like this Paleo Pork Chops and Apples recipe.

Paleo Pork Chops and Apples

Grab a skillet and fry those chops up. Serve them with a big ol’ salad, or whatever your go-to side is, and just be done with it.

Paleo Pork Chops and Apples

Being in the kitchen for me is like therapy. I just go, do what I need to do, block all else out and basically stop thinking about anything I had on my mind before.

Paleo Pork Chops and Apples

I let my hands do the work and it’s truly the only time my brain is really calm.

Paleo Pork Chops and Apples

Jeff isn’t a fan of fruit paired with savory, so I don’t typically mix those flavors often but he really enjoyed this combination and I hope you do too.

Pan Fried Paleo Pork Chops and Apples

Yield: Serves 2-3

Ingredients

  • 5 cloves garlic, minced
  • fresh cilantro, chopped
  • 1/4 cup bone broth - or chicken or beef broth
  • 4 bone-in pork chops
  • garlic powder, onion powder, sea salt and coarse ground black pepper, to taste
  • 3 organic Gala apples
  • 2 tablespoons grass-fed butter

Directions

  1. In a large frying pan or cast iron skillet add garlic, cilantro and bone broth over medium heat for 1-2 minutes.
  2. Season pork chops with garlic powder, onion powder, sea salt and black pepper on each side and add to the skillet.
  3. Cook for 3-5 minutes, or until browned, then flip and continue to cook until done (minimum internal temperature of 145 degrees F). While cooking, spoon some of the garlic broth over the chops.
  4. Meanwhile, melt butter in another frying pan. Sauté apples over medium-low heat until tender. (While the apples are cooking you may need to reduce the heat on the pork chops so everything finishes at the same time.)
  5. Transfer the apples to the pork chop skillet and let marinate together for 2-3 minutes to combine the flavors.
  6. Spoon remaining broth over pork chops and serve with apples on top.
  7. Enjoy! :)
