More than half the battle of eating oysters at home is figuring out how to open them. You know that screw driver sitting in your garage or junk drawer? We’ll be using that to open up the oysters so dust it off, give it a good suds with some soap and water and let’s get crackin’! :)

My screwdriver worked just fine for prying these bad boys open, but if you prefer to shuck like a pro, you can learn how here or watch a video thanks to the guys at Chef Steps here.

Paleo Raw Oysters

Once you’ve wrestled the shells into submission, all you need is a little seasoning and you have a simple, elegant appetizer to impress all your friends and family.

Now, just because these oysters are served raw doesn’t mean you don’t have to touch the stove, but it’s only for a minute, I promise. After all, nothing goes better with oysters than a little melted butter and lemon.

I  added some chives and dill for a little extra flavor and to add some color, and the result was pretty satisfying.

Paleo Raw Oysters

Yield: Serves 2

Ingredients

  • 8-10 raw oysters
  • 2-3 tablespoons grassfed butter
  • 1/2 lemon, juiced
  • sea salt and black pepper, to taste
  • fresh chives or fresh dill, minced

Directions

  1. Crack open your oysters.
  2. Melt the butter in a small saucepan over medium heat.
  3. Add lemon juice, sea salt and black pepper to the butter and stir to combine.
  4. Pour lemon butter juice over oyster halves, garnish with fresh minced chives, fresh dill or both and serve.
  5. Enjoy! :)
