This weekend I’ll be cooking up some Paleo appetizers straight out of Pigskin Paleo. Thanks to Airbnb we’ll be meeting in a beautiful space in Chicago and I’ve planned a tasting menu of appetizers that are not only perfect for a typical game day, but also for the ultimate game day: Thanksgiving.
First I’d like to do a quick show-and-tell about the most recent Pigskin Paleo tasting that just happened and thanks to Teri, I’ve got some fun photos to help you feel as if you were actually there. Cooking Demonstration, Tasting and Book Signing
The most recent event I hosted was not only meant to help promote my cookbook Pigskin Paleo but also to spread the word about Paleo in general. The tasting menu for this event included Yuca Fries with Sweet and Spicy Salsa, Caprese Towers, Pesto Stuffed Avocados, White Chili and Apple Pie in a Bowl for dessert.

While cooking and serving those dishes I discussed my personal definition of Paleo, the positive results I’ve seen since going Primal in 2008/2009, the difference between Paleo and Primal, the process we went through to publish and release Pigskin Paleo, the benefits of a Paleo diet and general suggestions for how to get started. Everyone was quite engaged and there were so many great questions.

I had so much fun sharing my recipes with everyone and thanks to the help of my sous chef Jeff and unplanned-assistant Michelle, I was able to pass around a taste of the entire menu and never leave my post while still talking the entire night. A big thank you is in order for the help these two gave me and also to my mom & dad for providing the location for the event. Michelle planned on attending and when she walked in I realized that she had already tried every single recipe on the nights menu and she volunteered to help pass out the tasting cups to everyone.

The Next Big Event is Approaching Quickly
This Saturday, November 10th 2012 I’ll be doing another free Pigskin Paleo cooking demonstration, tasting and book signing and I’d love to see you there. I’ve partnered up with Airbnb to offer a similar event with a different menu to help give you some Paleo appetizer ideas to serve on Thanksgiving. The event is happening at a gorgeous location in Chicago. The owner of the space, David, is a high end interior designer and his basement was recently featured in a Food Network dining event.
If you’re not familiar with Airbnb they’re a community marketplace for people to list, discover, and book unique accommodations. We’ve personally been booking locations with them for the last two years and we’ve rented spaces from all around the world.
