When people hear we don’t eat grains, that means no cereal, so a question we get a lot is “What do you eat for breakfast?”
For us, the answer to that question is always changing (currently it’s typically a cup of Bulletproof coffee) but since we’ve started following a Paleo diet, the answer has always been real food.
Paleo breakfast is something a lot of people starting out on the Paleo diet struggle with because they get tired of eating eggs every day.


The Versatility of Eggs
Personally, I don’t understand that complaint. I can understand if you have an egg allergy but if you don’t, there’s so much you can do with eggs to change it up.
Boil them. Bake them. Fry them. Scramble them. Mix them with anything you want. Anything. And this recipe is just one example of some of the awesome things you can do with eggs.
Now, like I said, eggs go with just about everything, but there’s something special about the combination of eggs and ham. Dr. Seuss didn’t write about it for nothing. ;)
The ham & egg combination just screams “I’m good AND hearty!”
It’s the kind of Paleo breakfast you eat when you know you have a big day ahead and you want to make sure you’ve got plenty of energy. Not to mention, it’s delicious!
That’s why you’ll see the ham & egg combination as an omelet or skillet on any menu, at any breakfast restaurant you stop at.
Throw in an onion and a poblano pepper to add a little kick in the mouth and you’ll be awake in no time!
No Excuses, You Can Make Time For This
With this recipe, I don’t want to hear the typical excuse “ain’t nobody got time for that!” because you definitely have time to make a good Paleo breakfast in the morning. It’ll take you just a few minutes to chop everything up and a few more minutes to cook everything and voila! Breakfast is served.
Plus! If you prepare the chopping ahead of time, all you need to do is throw it all together in the skillet, scramble, transfer to a take-away container and run out the door with your tasty, hot breakfast. :)
