When Jeff & I rode our bikes to Yorkville for my first triathlon I packed these Italian Paleo Sub Sandwiches to eat during our ride. When we decided to stop for lunch, Jeff & I both enjoyed our meal.
I added the subs to this week’s meal plan originally as an extra snack for Jeff, but instead I decided to make them as a quick lunch along with a side salad.
