Mousse is a funny word. When you hear it, what’s the first thing you think of?

Well duh, probably Primal Salmon Mousse, because you just read the title. Well this version of mousse is best served cold with cucumber chips and makes for a good game day recipe, say you know…for the Super Bowl and all. :)

There’s mousse, mousse, moose and mouse. Man am I glad English is my first language. It’s the common language used around the world to communicate and I have friends who’ve learned English as a second language and some things are just pretty funny to explain. By no means am I anywhere close to an English teacher (math is my background) but sometimes I can carry on a conversation and have people understand what I’m talking about. ;) Just think about having to explain those words to someone just learning the language.

  • Mousse, a foamy hair product.
  • Mousse, a dessert (such as chocolate mousse) or a savory dish (like this one) stabilized with gelatin and chilled in a mold.
  • Moose, you know, like the animal with antlers that you may find roaming about in Wyoming or Montana.
  • Mouse, that little bugger that wiggles it’s way around the TV screen or maybe your home (or on an iPad) that cats enjoy chasing.

Phfew! There’s so many combinations of words like this, that are totally different and sound so alike. It’s fun sometimes to think about it or discuss it with friends who are trying to teach you another language. Now that’s another whole conversation right there.

The Happiness Project

On January 1st my friend Michelle mentioned she was going to read The Happiness Project. Have you read it? What’s funny is, for some reason, that same week I had just come across it and requested it from the library. Currently, I’m just a little beyond half way through. I’m typically not a big reader because I tend to not find books I enjoy and I tend to feel guilty about sitting down to read when there’s so many other things I need to do, but I’m really connecting with Gretchen and enjoying this book. Her project was to explore a new concept each month for a year, in the spirit of being happy and I love doing little experiments myself so you can see why I’m lovin it.

One of the passages I enjoyed most recently came from her Lighten Up goal during the month of April. One of the mini-focus-points was to Be A Treasure House of Happy Memories and she talked about creating new traditions with her family. She asked her readers on her blog for traditions others observe and this was one of them:

“My brother has a tradition with his family. Every once in a while, they have “Pirate Dinner.” They cover the table entirely in newspaper and eat with no plates, napkins, or utensils – just hands! He says that his kids have to follow rules and proper table etiquette all the time, so why not give them a break every now and then?”

Sounds pretty fun and quite Primal to me, doesn’t it? Now you see why I enjoyed that example most. :)

Well let’s get on to today’s appetizer. I wouldn’t recommend serving this during a “Pirate Dinner” but heck, that might be even more fun! Of course if you need any more ideas of what to serve during the Super Bowl, Pigskin Paleo is…well you know the rest.

Primal Salmon Mousse

Yield: Serves 8-12

Ingredients

  • 3 tablespoons cold water
  • 1 teaspoon unflavored gelatin
  • 4 ounces smoked salmon, chopped
  • 1 cup greek yogurt
  • 1 lemon, juice
  • coarse ground sea salt, to taste
  • fresh dill, optional
  • 1 english cucumber, sliced

Directions

  1. Place water in a small saucepan and sprinkle with gelatin. Let sit for 5 minutes.
  2. Gently heat over low, constantly stirring, just until gelatin dissolves. Remove from heat and set aside.
  3. Combine salmon, greek yogurt and lemon juice in a food processor. Puree until smooth and season with salt.
  4. With the motor running add slightly cooled gelatin mixture and blend until combined.
  5. Pour mixture into the bowl you'll be serving it in.
  6. Cover the bowl with plastic wrap and be sure not to touch the surface as you're doing this.
  7. Refrigerate until firm but spreadable, about 2 hours or even overnight.
  8. Garnish the top with fresh dill when ready to serve.
  9. Just before serving slice fresh cucumber crackers (or any other serving vegetable such as zucchini, carrot, celery, etc.).
  10. Enjoy! :)
