Garlic scapes are the stems that grow from garlic bulbs before the bulbs mature. That makes them a vegetable and you should always be sure to eat your vegetables. They come loaded with vitamins, minerals, and powerful antioxidants that are effective in boosting our immune systems and keeping inflammation low, both of which are important for avoiding disease.
Garlic scapes in particular are high in vitamins C and A, and fiber. We like fiber because it feeds the beneficial bacteria in our guts, which is important for keeping everything in working order. As with garlic bulbs, garlic scapes are also high in sulfur, which has a number of health benefits, including improving glucose tolerance. Recently, it has been studied for it’s potential cancer-fighting effects.
