Tortillas are made from corn. Since corn isn’t Paleo, neither are tortillas.
But if you find yourself in Mexico or your friend is making really good homemade tortillas, would giving in (for the sake of manners if nothing else) really be detrimental to our health?
Probably not, unless you have some severe issues. Corn tortillas are made from corn that has been nixtamalized, which means it has been added to a mixture of water and lime (as in calcium hydroxide, not the fruit), brought to a boil and left to soak. The process reduces the antinutrients found in the corn and makes other nutrients more bioavailable, including protein, calcium, niacin, and vitamin B3 (source).
