Turnip greens are the green leaves that grow off the tops of turnips. While turnips are certainly Paleo-friendly and capable of packing their own nutritional punch, that’s no reason to leave the greens out of your diet. A healthy diet should always be rich in leafy greens and turnip greens are no exception.
The Nutritional Benefit of Turnip Greens
Like most leafy greens, turnip greens are an extremely rich source of vitamin K, as well as vitamin A, vitamin C, and various B vitamins. Certain trace metals, such as calcium and manganese, can also be found in significant quantities in turnip greens.
Eat the Whole Animal/Plant
If you’ve been hanging out in the Paleo sphere for a while, then you know that the best thing for us (and our environment) is to eat the whole animal. Same goes for plants.
