Almond milk is simply ground almonds blended with water, so it is perfectly Paleo-friendly. As is always the case when living a Paleo lifestyle, making your own is preferable to buying the store-bought stuff that has been sitting on the shelf for who knows how long and probably contains chemical additives.
Almond Milk vs. Dairy
Almond milk is frequently used as a substitute for milk for those who want to avoid dairy. It’s not as high in protein as animal milk, but it does contain all the nutrients of whole almonds, including vitamin E, magnesium, selenium, manganese, zinc, potassium, iron, phosphorous, copper, and calcium. Some studies have even found that consumption of finely ground almonds helps boost levels of beneficial gut bacteria.
If you want to avoid the store-bought stuff, Chris Kresser has a recipe for making your very own Paleo almond milk.
