Bouquet of Herbs
Bouquet Garni is French for “garnished bouquet”. It refers of a bundle of herbs that have been tied together before adding them to a pot for soup, stock, or stews. The bouquet is then usually discarded before the finished product is consumed.
An Herb Blend
Rather than using an actual bouquet, you can use Penzey’s Bouquet Garni, which is just a blend of herbs that comes in a jar or bag, depending on how much you buy. Recipes for Bouquet Garni vary, but Penzey’s includes savory, rosemary, thyme, oregano, dill, marjoram, sage, and tarragon.
The Health Benefits
Not only are all of these ingredients Paleo-friendly, but they have noted health benefits. Herbs are known for their antioxidants, and with good reason. Studies have shown that some herbs (such as rosemary and thyme) have the ability to protect fats from oxidation, making them an excellent addition to any fatty meal. They have also been found to be effective against carcinogens, meaning the use of herbs could be an important factor in preventing cancer (source).
Because different herbs convey different health benefits, the best way to get the most out of them is to consume a wide variety of herbs. Bouquet Garni can help with that because it’s already a combination of several herbs combined into one convenient package.
