Cauliflower is a vegetable that belongs to the cabbage family, and since every good diet involves eating lots of vegetables, that includes cauliflower.

The Nutrients

Cauliflower is particularly rich in vitamin C and B vitamins, but it also has significant amounts of vitamin K, manganese, phosphorous, and potassium. It’s also full of phytochemicals, which are chemical compounds the plant produces to protect itself from predators. Unfortunately for the plant, these phytochemicals convey numerous health benefits for us when eaten. The compounds in cauliflower specifically are being studied for their anti-cancer properties.

The Importance of Sulfur

Cauliflower is also a sulfur-rich vegetable. You may not have heard much about sulfur before now, but it’s an essential nutrient that is necessary for the production of hormones that keep everything working, including our digestive system, cardiovascular system, nervous systems, and muscles.
