We’re a big fan of fermented foods and giardiniera is no exception. Fermenting our food is not only a great preservation method, it’s also a great way to introduce beneficial bacteria into our digestive systems.
Our Long History With Bacteria
I know eating something that has been intentionally “contaminated” with bacteria sounds like a bad idea, but it’s actually necessary for our health, because we didn’t evolve in a sterilized environment. We evolved in sync with billions of other tiny bacteria living in our guts and on our skin and in our hair. These guys work hard to keep us healthy, and in return, we give them a place to live.
The Cost Of Civilization
Except the latest craze for antibiotic everything has made it harder for these little guys to help us out. The result has been disastrous for our health, and an excellent way to try to restore some of that health is by eating lots of fermented foods, including sauerkraut, pickles, kombucha and giardiniera.
