Golden balsamic vinegar is balsamic vinegar that has been made using white grapes.
Golden balsamic vinegar is usually made by a process similar to dark balsamic vinegar, but faster. The grapes are cooked more quickly to prevent them from caramelizing, and instead of aging it for several years (traditional dark balsamic vinegar is aged anywhere from 12 to 25 years), golden balsamic vinegar is aged for only one year to keep the color and flavor light.
The Health Benefits
It’s highly unlikely that our cavemen ancestors were fermenting and distilling their grapes. Nevertheless, it is a natural process that comes with a number of health benefits. Vinegar has been noted for its ability to improve glucose tolerance (source), and by aging vinegar in wood barrels, the wood imparts antioxidants to the vinegar. Those antioxidants benefit us by keeping inflammation low and boosting our immune systems, along with numerous other benefits.
