Mascarpone is a type of Italian cheese that is made from cream and some sort of citric acid or acetic acid. Once the cheese has been denatured, the whey is removed without pressing or aging the cream. This makes it a whole food, so it can absolutely be included as part of a Paleo diet, as long as you can tolerate dairy.
Mascarpone is a pretty sweet cheese, which makes it perfect to use in desserts. It’s one of the main ingredients in tiramisu (which is not Paleo), but if you choose to include dairy in your diet, you can use mascarpone to create your own Paleo-friendly dessert.
The Benefits of Dairy
Despite the fact dairy causes problems for some people, for those of us who can tolerate it, it can be a great source of nutrients. It’s rich in vitamins and minerals, many of which are fat soluble, so full-fat dairy is always preferable to low- or non-fat. If you can manage to find raw dairy, that’s even better because it contains vitamins, minerals, and helpful digestive enzymes you can’t get from pasteurized dairy.
