Mayonnaise is basically egg yolks with some sort of oil and a little bit of acid (usually vinegar, lemon juice or lime juice). That’s Paleo, right?
The Oil Matters
It all depends on the type of oil you use. If you use coconut oil, extra virgin olive oil, or even avocado oil, you can absolutely include mayonnaise in your Paleo lettuce wrap or salad dressing. The problem with the store-bought mayonnaise, is they almost always use some type of rancid vegetable oil. Whether it’s canola oil or soybean oil, it doesn’t usually fit our qualifications for food. It’s more like Frankenfood.
