Phytic acid is known to interfere with mineral receptors in the body, leading to nutrient deficiencies. Lectins can puncture the lining of the stomach, letting toxins and undigested food into the blood stream and creating inflammation as the body initiates an immune reaction.
The Benefits of Fermentation
Fermenting soy does eliminate some of these nutrients, but not all of them, and it can’t do anything about the fact that soy has been found to be estrogenic and possibly even carcinogenic.
