Okra may not be very well known outside of the southern United States, but that just means the rest of us are missing out. This green vegetable is an excellent source of vitamins K, C, and B, as well as a healthy helping of magnesium.
The Health Benefits
As with most vegetables, okra is high in antioxidants, which help lower inflammation, making okra an excellent choice for those who want to avoid getting sick. Antioxidants have been shown to prevent more than just the common cold (though they help with that, too). A diet high in antioxidants has proven to be effective in combatting the wide array of illnesses that result from chronic inflammation, including everything from diabetes to heart disease to arthritis.
