Paleo and Pastry
Nope. Using those eggs and veggies to fill a pastry crust doesn’t make the pastry healthy. In fact, the crust can negate some of the health benefits of the filling. Gluten, which is found in wheat flour (a primary ingredient in pastry) is known to cause inflammation and leaky gut. When it manages to get through the lining of the gut, it lets other toxins and undigested foods into the blood stream, setting off an immune reaction. The body then spends energy attacking the misplaced food particles as invaders, rather than digesting them.
The immune reaction also includes a fair amount of inflammation, which creates stress on the body and leaves it vulnerable to attack from any outside bacteria or viruses.

On the other hand, you can always make yourself a crustless quiche, because that is Paleo ;)
