Radicchio is a leafy vegetable, and there’s no shortage of reasons to eat lots of vegetables. We’ve all heard they’re good for you, but what does that mean, exactly? How are they good for us?
Well, for starters, they’re one of the richest sources of vitamins we have. Radicchio in particular is loaded with vitamin K, a vital nutrient that we need in order to transport calcium out of our bloodstream to our bones and teeth. Without vitamin K, the calcium just sits there in our blood stream building up plaque.
