Red Kuri Squash (a.k.a. kari squash) is a vegetable, a member of the pumpkin family, so it can absolutely be included as part of a healthy Paleo lifestyle.
Carbs vs. Fiber
Like most squash, red kuri squash are high in carbs, but they’re also high in fiber, which helps slow the digestion of those carbs, so they don’t cause an enormous spike in blood sugar. Fiber is also necessary for feeding the beneficial bacteria in our guts, so don’t knock it!
Add to that the fact that red kuri squash is a nutrient-rich vegetable, and it can definitely be including as part of a healthy diet. It’s especially rich vitamins A, C, and various B vitamins. It’s full of minerals, too, including calcium and potassium (source).
