Sherry vinegar is exactly what it sounds like: sherry that has been distilled into vinegar. Although sherry holds a somewhat uncertain position on the Paleo menu, there are plenty of reasons to include vinegar.
Paleo and Carbohydrates
For starters, once sherry is distilled into vinegar, it loses its carbohydrates, that evil macronutrient that spikes our blood sugar and make us crave more carbs. Even if it were high in carbs, we consume so little of it at a time that it’s not enough to be a concern.
The Health Benefits
Despite the low doses we consume, vinegar does have some notable health benefits. Studies have shown it can help improve insulin sensitivity, cholesterol levels, and it’s an effective herbicide (source).
