Paleo differs from conventional wisdom in many ways. We’ve all gotten more than a few strange looks from friends and family members as we pass up the bread and go straight for the bacon, but there’s one thing we can all agree on: vegetables are really good for you. Especially spinach.
The Nutrients
Living a healthy Paleo lifestyle is all about eating lots of nutrient-dense foods, and you can’t get much more nutritious than spinach. These leaves come loaded with vitamin K, vitamin A, and vitamin C. While calcium has gotten all the glory when it comes to building strong bones, calcium would be nothing without vitamin K to transport it out of our blood stream to our bones. Without vitamin K, calcium would just sit in our arteries, building up plaque and causing inflammation.
The Health Benefits
Vitamin A helps with eyesight. It’s also a potent antioxidant that has been known to eliminate free radicals from the body, prevent cholesterol from oxidizing, and lower inflammation.
The Dangers of Inflammation
Inflammation has been linked to all sorts of chronic illnesses, including cancer. So by eating our spinach and keeping inflammation down, we should be able to avoid getting cancer, right? Actually, there is some evidence to suggest that’s the case.
