Paleo and Fat
Suet is raw beef fat, and since Paleo is a high-fat diet, we definitely encourage including suet in your diet if you can get your hands on it. It’s almost entirely saturated fat, followed by monounsaturated fat and just a small amount of polyunsaturated fat (PUFA). If you make sure to get suet from grass-fed beef, it will be higher in omega-3 fats (which are anti-inflammatory) than suet from grain-fed cattle.
Suet vs. Tallow
