Sweet potato flour is just sweet potatoes that have been dried and ground into flour. Since sweet potatoes are Paleo, there’s no reason sweet potato flour can’t be included.
Uses and Benefits
Sweet potato flour can be an excellent gluten-free flour to use in either sweet or savory baked goods. It’s high in carbs, but it’s also high in fiber, which helps mitigate the sugar rush most of us get from eating too many carbs. Even better, sweet potatoes are a nutrient-dense food, unlike all those grain flours.
